Ulundhu also called as Urad dal
Ulundhu also known as Urad dal or split black gram is a staple in Indian cuisine. It is a rich source of protein, fat and carbohydrates. Ulundhu is extensively used in various south Indian recipes such as idli, vada and appalams.
Process involved
Appalamsโthose crunchy, fried discs made from urad dhal flourโhave remained an evergreen favourite for both kids and adults. In fact, no South Indian meal feels complete without them. At Mylapore Ganapathyโs, we follow the traditional method to make them using Black gram (Ulundhu) flour.
First, we grind the dal into a fine flour. Then, we sieve it carefully and knead it into a smooth dough. Next, we roll the dough into thin sheets and cut it into circles of various sizes. After shaping, we sun-dry the dhal appalams thoroughly to preserve their natural taste and crispiness.
Finally, we pack them into bundlesโcompletely free from preservatives or food coloursโensuring purity in every bite.
